Welcome everyone to our newest section of the newsletter. Here is where you’ll find information on new menu items coming up for the month as well as providing a place where you can watch some of your favorite ingredients arrive for the season and wave goodbye for the year.

What’s in season for spring? April is the time where fiddlehead ferns arrive on the plate, some of the sweetest english peas you’ll ever experience appear in farmer’s markets and artichokes reign supreme. It’s a time of spring onions that work great on the grill and morel mushrooms that have been wild foraged. Strawberries and rhubarb, sweet corn and baby lettuces are all in bloom across the country. Here in central Ohio it’s a time of great excitement around the kitchen as local produce is just starting to ramp up with the warmer weather.

Lobster Mac N' Cheese

This dish has quickly become one of our most popular dishes ever. It combines the down home comfort of macaroni and cheese with the luxury of two incredible ingredients… lobster and truffles. The butter poaching for the lobster helps to keep the lobster, moist and supple while encapsulating the flavor in the meat and enriching it with butter. It’s one of those dishes that would cause a riot if it were ever removed from the menu. The recipe is very simple for you to try it in your own home. If you like bacon you can substitute bacon for lobster and add goat cheese. Or you can melt some of your favorite cheese into it. That’s the beauty of cooking. Enjoy!
