Dean James Max is true third generation 'foodie'. His grandfather, a chef at an upstate New York resort went on to open and operate a quaint bed and breakfast in Cape May. His father grew up on a farm in New Jersey and started his own farm on the Eastern Shore of Virginia. Max recalls tending his own pepper patch as a small child and enjoying the bounty of the Chesapeake Bay.

It may be that he inherited his chef genes from his grandfather, but his youth was spent in farm coveralls rather than chef's whites.

 
Snickerdoodles

This is a recipe for my favorite cookies. Snickerdoodles are not as well known as one might think but historians have found variations of cookies much like snickerdoodles dating back to the Roman Empire. It’s thought that the word “snikerdoodle” is Germanic in origin and was a poor translation of the word Schneckennudeln or a cinnamon dusted roll. They can be cooked to your preference for more crisp cookies that are great for dunking or soft (as I do in my own home) with a nice warm mug of egg nog and a fireplace. They’re very simple to make and if you have a kitchenaide they are extremely quick to whip out.

Moroccan Chermoula

This is a great example of a Moroccan chermoula condiment. The flavors are so robust yet subtle the really lend themselves well to all sorts of dishes. Crostini with chermoula and goat cheese is a great example. Using is as a condiment with pork of roasting chicken pieces in with the chermoula and some extra stock. Fish is also equally impressive with this accompaniment. Find your favorite application and enjoy!
