Alice and Adelaide

We affectionately refer to this installment of our newsletter as the “Alice and Adelaide” edition, not because it’s about our two spinster aunts but because the TDU crew split up to cover more territory. In the fine tradition of “divide and conquer,” Adriel went to Alice Springs to spend almost two weeks working at the Alice Springs Convention Center under the expert supervision of Executive Chef Athol Wark, while David and Barbara drifted between Darwin and Alice Springs in the Northern Territory, and Adelaide in South Australia. The stories in this edition reflect the diversity of our experiences in these very different places, but they all have a common theme that, by now, we’re pretty sure you’re starting to see for yourself: eating, drinking, traveling, just the basic wondering and wandering that is required if you’re going to Taste Down Under.


 
Biting into South Australia
South Australia is called “The Festival State,” and it was easy for us to see why. South Australia has a lot to celebrate. We spent the few days we had in South Australia in and around the area that marks the start of The Great Australian Bight. The phrase doesn’t describe the geography alone.

... Adelaide. Andrew Fielke and Murray Hird could be twins separated at birth. But they aren’t. A friend of Murray’s going back many years (though neither will tell how many) Andrew is a chef and entrepreneur who has been a proponent and supporter of wild foods for more than a few decades.

Between the Rock and a Hard Place
Thanks to the generosity of the Northern Territory Government and Tourism Commission, Adriel was “shouted” (as in “my shout,” when you buy your mates a round of drinks) to a backpacker adventure to Uluru, a.k.a.“The Rock," while in Alice Springs.

Dear Diary
Since arriving in Australia, I have been blown away with the various native herbs, plants, spices, and animals. However, it is only within the last couple days that I have truly gotten a taste of the real "outback."

Wark on the Wild Side
We met Athol Wark, Executive Chef for the Alice Springs Convention Center, in the antechamber of the Alice Springs City Council House. He and Adriel were putting the finishing touches on a meal specially prepared for the City Council featuring ingredients that are coming to be known as “wild foods.”
