For the past 7 years, 3030 Ocean has hosted an annual charity function in its restaurant to benefit Kids In Distress. We fly in chefs from all across the globe to prepare a course with our very own Chef Dean Max - and it has always been a tremendous hit! This year's event is being held on the evening of December 16th and will feature a star array of chefs as well an amazing host winery. Don't forget to mark the date on your calendar and stay tuned for highlights of the feature chefs and wine maker in future newsletters!!!

This recipe has some great flavors that can be used separately of each other. The salmon curing process is easy and fun to try at home. The crispy mushrooms are great with salads, steaks, and fish, and the vinaigrette is amazing if you use one of the super fresh vinegars that can be found in your local speciality stores. Together they make a great fall salad and compliment each other with flavor, texture, and balance. Enjoy!

The autumnal equinox on September 22nd marks the official end of summer. The days have already become noticeably shorter and the nights longer. Summer crops are decreasing in yield and autumn fruits and vegetables are beginning to appear both in markets and in cuisine. Although Florida experiences very little seasonal weather changes, hints of autumn can be found in subtle changes of cooking styles, flavors, spices and ingredients. As the face of cuisine changes with season, wine does as well. The crisp, bright & acidic wines of summer are giving way to those that better compliment the changing flavors of autumnal cuisine.

Like seasonal foods, most wines come into their own throughout different times of the year. Autumn is a middle ground for wine drinking, neither entirely ideal for the light, crisp whites of summer nor the big, rich reds of winter. Another Year at Epcot Food and Wine Festival!
Mark your calendar for October 17th-19th

The annual Epcot Food & Wine Festival is an exciting culinary adventure through the cuisine of the world that lasts for several weeks each autumn. Every year, Epcot brings in a dozen plus chefs each week and highlights their cuisine in an array of different events. The main event is called "Party of the Senses" and takes place on Saturday night of each week. In an atmosphere that only Disney can create, each guest chef at the party prepares an item to be paired with wine from a featured wine maker.

The link attached above highlights the featured chefs of each week. Note that Chef Dean Max is being featured October 17th through 19th. Even if you are unable to attend the festival that weekend, you should at least try to experience this great event at some point.

This year the Epcot Food & Wine Festival commences on September 26th and concludes on November 9th.

 
September is Time to Give!
Here are some of our charity events this month!

This month we start back to school with the kids, vacations are over, and back to work as usual. Now it's time to get out and see our local friends and what better than supporting our local charities. This month we have great events that benefit awesome charities like the Cystic Fibrosis Foundation, March of Dimes, and our local Ann Storck center. We look forward to seeing you at one of them! Call Nicole at 954.765.3129 for reservations to Octobers class. The class is scheduled for Sunday, October 26th and starts at 11am. The class includes a three course lunch with wine and costs $75. The menu is not set seeing that Chef Max, who will be attending Oktoberfest in Munich this year, will be returning with some very authentic recipes for an amazing fall feast!

With fall upon us, it only feels right to start off the season with great cool weather desserts like bread pudding. The bananas and rum will keep summer around in your mind and deliver some serious happiness to your taste buds. Make sure to use great chocolate. If your going to eat decadent, don't waste the calories on cheap chocolate.
