South Florida's Sun Sentinel newspaper recently released a new series of online cooking videos entitled "Chef's Fast Favorite," featuring easy to replicate recipes from local chefs. Chef Dean Max was chosen by Sun-Sentinel to head up the very first online release. Sticking to the simple theme, Chef Max prepared his recipe for Pan-Sauteed Swordfish with Dill Tomatoes and Lemon-Accented Spinach. Wahoo! Now that's a tasty fish!

Probably named for it's incredible fight, Wahoo also known as Ono by the Hawaiians, is a very clean and sweet steak like fish. You can cook it through, but like tuna it becomes more dry due to it's super lean flesh. I prefer it lightly seared and sliced thin, or simple raw in tartar or seviche. Enjoy this recipe with great summer radishes and a light soy juice!

We use a good aged rum instead of the spiced rums which would compete with the soft flavors of the peach. Another Great James Beard Dinner

So many people go to New York and never take advantage of going to the James Beard House for dinner. Even if your not a member, you can pay a little extra to have dinner at the house and taste the delights of the featured chef at his best in the city. Chef Dean and his chefs just returned from New York with another successful dinner behind them and some great pictures as well. Enjoy!

There are so many events coming up this fall, you will want to mark your calendar to make sure you do not miss any of them!
First is the cooking class on Sunday, September 7th. Chef Max will be making lobster casserole, pepper roasted swordfish, ratatouille, a spicy tomato cream [sauce?] and an anchovy egg salad. Dessert will feature roasted summer peaches with blue cheese and pecan ice cream.
In October, Chef Max will be returning to the Epcot Food and Wine Festival for the weekend of the 17th through the 19th.
Also make plans to join us for our 7th annual kids in distress dinner on Tuesday, December 16th.
