Hold the glass by its base and look from an angle at the surface of the cognac. This is where you can see the true color of the cognac.
Next, smell the cognac a few times by bringing your nose close to the rim of the glass. You will detect the strongest aromas, which are called 'the montant.'
Swirl the glass gently, wait two or three seconds and bring the glass to your nose to take in the fine bouquet. The fruity or floral aroma you detect is called the 'second nose.'
