Meet the new Executive Chef at the Bistro
Justin Shannon
Bentley’s Bistro is proud to announce our NEW Executive Chef Justin Shannon, coming to us from Bouchon and the French Laundry, both Thomas Keller owned restaurants. Justin was born and raised in Clovis, California. After being introduced to food by his father, a local butcher, Justin headed off to the prestige Culinary Institute of America in Hyde Park, New York. While studying at the CIA, Justin interned at The Little Nell (a 5 Star/5 Diamond restaurant) in Aspen, Colorado. After graduation Justin went to Napa Valley to work for the Thomas Keller Restaurant Group. With four years of intense learning and hard work for Thomas Keller, Justin decided to return to his roots in the Central Valley, where he could share his success with his new wife and family.

Cheese Department
Gruyere is one of Switzerland’s better known, most prevalent and finest cheese; a big beautiful repository of alpine flora and terrior. Its hard to semi-hard paste melts in your mouth and reveals a nutty, slightly sweet taste. A well-aged Gruyere flatters full-bodied berry flavored red wines, and also works well with sparkling wines.
