Autumn is definitely in full swing! The colors of the leaves on the trees are changing as well as the beautiful Produce here in the valley. The days of tomatoes and corn are known over but the fall has a wonderful bounty to choose from.
As a chef, this is one of my favorite seasons because the Produce of fall brings us beautiful squash such as butternut and acorn, a wide array of root vegetables (parsnip, potato) and beautiful hearty greens such as kale, swisschard and cavolonrero. These vegetables lend themselves very well to the slow braises and rich soups that will keep us warm as the weather starts to cool. Apples, pears, and persimmons will be showing up as well. These versatile fruits can be used in both sweet and savory dishes. They will be popping up on both dinner and dessert menus. At the bistro the patio is beautiful this time of year even if it seems chilly order some of our slow braised beef short ribs because they are guaranteed to warm you up!
