One of my personal favorites is the GRILLED VIETNAMESE SANDWICH also know as Banh Mi. This French inspired sandwich has a small dose of heat and a huge amount of flavor. I like this sandwich with a cold beer, an off-dry rose or slightly chilled pinot noir
SUGGESTIONS
• Any wheat ale will do but I like Lost Coast Tangerine Wheat Ale. It has a robust perfume of fresh tangerine flowers and a wonderful citrus finish.
• Handley Rose of Pinot Noir is a great match.
• Marimar Torres Estate Pinot Noir is one of my favorites.
INGREDIENTS
- 4 boneless pork loin chops, cut 1/4 inch thick
- 4 (6 inch) French bread baguettes, split lengthwise
- 4-6 teaspoons mayonnaise, or to taste
- 2 ounce chile sauce with garlic or to taste
- Juice of 2 fresh limes
- 1 small red onion, sliced thin
- 1 medium cucumber, peeled and sliced on the bias
- 4 tablespoons chopped fresh cilantro
- Sea salt and fresh cracked pepper to taste
- Fresh Basil leaf (whole)
DIRECTIONS
- Preheat grill to medium. Salt and pepper both sides of the pork chops and place in the center of the grill. Cook for about 5 minutes, turning once, or until well grilled on each side.
Open the French rolls and place face down on the grill until lightly toasted and they have some nice grill marks. Spread mayonnaise on the insides. Place one of the grilled pork chops into each roll. Spread chile sauce directly on the meat. Sprinkle with a little lime juice and top with slices of onion, cucumber, cilantro, basil, salt and pepper. Finish with another quick drizzle of lime juice.
