Bentley's Featured Cheese - Colston Bassett Stilton

Colston Bassett is one of the smallest Stilton dairies in the Europe, and the only one still hand ladling the curd by hand. This is a very labor intensive pricess where over 1000 gallons of curd are scooped by small ladles into drainers.
The curd is handled more gently, rather than with chutes and curd conveyors of the larger dairies. Stiltons for Neals yard dairy are made to a more traditional recipe with traditionl animal rennet and a slower ripening. The result is an incomparable cheese of rich creamy texture and subtle deep flavors.
